Gluten Free Chickpea Flour Muffin Recipe

Instructions

  1. Preheat the oven to 350°F. Line a large muffin pan with muffin/cupcake liners and set aside.
     

  2. In a mixing bowl sift together the chickpea flour, baking soda & salt.
     

  3. In a large bowl, using a handheld mixer, cream the butter and sugar together until pale and thickened, about 3-minutes. Next add the eggs into the bowl of creamed butter & sugar and mix until well combined. Add the vanilla and mashed bananas and mix well.
     

  4. Mix in the reserved flour blend until well combined, and then fold in the chopped pecans.
     

  5. Pour the batter into the lined cups of the muffin pan. Evenly top each one with 1-teaspoon of turbinado sugar.
     

  6. Bake for prepared pan. Bake for approx. 20 – 25 minutes, or until a toothpick inserted in the center of the muffins comes out clean. 
     

  7. Let cool to room temperature before serving.

Instructions

  1. Preheat the oven to 350°F. Butter and flour a 10-inch round cake pan using (use the GF 1:1 flour).
     

  2. In a mixing bowl sift together the chickpea flour, GF 1:1 flour, baking powder & salt.
     

  3. In a separate bowl whisk the melted butter together with the olive oil & milk.
     

  4. In a large bowl, using a handheld mixer, beat the eggs with the sugar and citrus zest until pale and thickened, about 3-minutes. Alternately beat in the dry and wet ingredients, starting and ending with the dry ingredients. 
     

  5. Pour the batter into the prepared pan. Bake for approx. 30-minutes, or until the cake is golden brown and the side pulls away from the pan.

Vegetable Pakora Vegan Fritters

Instructions

  1. Combine the chickpea flour, rice flour, salt & garam masala in a mixing bowl and set aside.
     

  2. In a large mixing bowl combine the cut vegetables with the cilantro, garlic & ginger, and mix until combined well. Set aside for 10-minutes.
     

  3. Add the flour mix into the bowl of vegetables and mix well to form a stiff-like dough. Adjust salt as needed, and add a few tablespoons of water if the dough is too stiff.
     

  4. Heat the peanut oil in a deep pan over medium heat to 350°F.
     

  5. When the oil is hot, test a small portion of the vegetable fritter batter to see if the oil is hot enough. The dough should rise in the oil without browning a lot.
     

  6. Fry the pakora in batches, stirring them as they cook. Allow the oil to come back up to temperature before frying the next batch. Drain the cooked pakora on paper towels, and then hold on a wire rack in a warm oven until ready to serve.

Instructions

  1. Preheat oven to 325°F. Lightly grease or line an 8" x 8" baking pan. Set aside.
     

  2. Place the oil, butter & chopped dark chocolate together in a microwave safe bowl. Melt in 30 second increments, whisking after each segment, until the butter is melted and the chocolate is completely melted and smooth. Once melted set aside to cool.
     

  3. In another large mixing bowl, use a handheld mixer to beat the egg & sugar together until thick and shiny. Mix in the apple sauce, vanilla extract & the reserved melted chocolate mixture.
     

  4. Gently stir in the chickpea flour, GF 1:1 flour, cocoa powder & baking soda, and mix just until you have a thick, fully blended batter. Stir in the chocolate chips.
     

  5. Pour the brownie batter into the prepared baking pan. Bake for 30 minutes, and then check for doneness.

Instructions

  1. Whisk together the dry ingredients in a large mixing bowl (chickpea flour, sugar, baking powder, salt & cinnamon) until no lumps remain.
     

  2. In a separate bowl whisk the eggs until well mixed, and then whisk in the milk, oil, melted butter & vanilla.
     

  3. Pour the wet ingredients into the dry and mix until just combined. The batter will be a little lumpy and that's fine. Let the batter rest for about 10 minutes.
     

  4. While the batter is resting take this time to prep your waffle iron according to its individual settings. If your iron allows you to choose the temperature set it to medium-high. Grease the iron plates if needed.
     

  5. When you’re ready, stir the batter once more and then scoop out 1/4-cup of batter and immediately pour onto the center of your heated waffle iron. Close the lid and let cook until golden brown and crispy.
